To make sure each bottle of wine is in the best condition we removed the capsule and inspect each cork and fill level. The bottles that failed this inspection, we use as tasting room sample. This procedure provides us with with the assurance that the wines meet our expectations for that year. You also can help us. Please wait 10 days after you receive the Pinot Noir before opening. Please store the wines in a consistent temperature near 64 F in darkened atmosphere. Heat and inconsistent temperature will alter the wines in a negative way. It is likely that the cork will crumble on our older vintage wines. You can reduce this issue by using a proper wine bottle opener. Insert the cork screw all the way through the cork and very very slowly pull straight up and out of the bottle by applying counter pressure placing your thumb on the outer side of the latch. DO NOT BE ALARMED if the cork disintegrates. We recommend you purchase one of our filters/funnel aerators. Keep it on hand to catch cork pieces and tartrates as you pour your wine.
